Hearty Homestead Shepherd's Pie

This classic dish is a hearty and satisfying meal, featuring a savory base of seasoned ground meat (traditionally lamb, but beef or a mix works beautifully!) simmered with tender vegetables, all topped with a fluffy, golden-brown layer of creamy mashed potatoes. Perfect for chilly evenings or a comforting family dinner, this shepherd's pie is a true taste of homestead cooking.

 

Ingredients

  • For the mashed potato topping:

  • 2 lbs potatoes (Yukon Gold or Russet), peeled and cubed

  • ½ cup milk

  • 4 tablespoons unsalted butter

  • ¼ cup grated Parmesan cheese (optional)

  • Salt and pepper to taste

    For the filling:

  • 1 tablespoon olive oil

  • 1 medium onion, finely chopped

  • 2 garlic cloves, minced

  • 2 medium carrots, diced

  • 1 cup frozen peas

  • 1 lb ground lamb or beef

  • 2 tablespoons tomato paste

  • 1 tablespoon Worcestershire sauce

  • ½ cup beef or chicken stock

  • 1 teaspoon dried thyme or rosemary

 

Directions

  1. Prepare the Mashed Potatoes: Boil the potatoes in salted water until tender (about 15-20 minutes). Drain and mash with milk, butter, Parmesan (if using), and salt and pepper. Set aside.

  2. Cook the Filling: Heat olive oil in a large skillet over medium heat. Add the onion, garlic, and carrots. Cook for 5-7 minutes until softened. Add the ground lamb or beef and cook until browned, breaking it into small pieces with a spoon.

  3. Add the Seasonings: Stir in the tomato paste, Worcestershire sauce, stock, thyme (or rosemary), salt, and pepper. Simmer for 10 minutes until the mixture thickens slightly. Stir in the frozen peas and cook for 2 more minutes.

  4. Assemble the Pie: Preheat your oven to 400°F (200°C). Spread the meat filling evenly in a baking dish. Top with the mashed potatoes, spreading them evenly to cover the filling. Use a fork to create small ridges for extra crispiness.

  5. Bake: Place the dish in the oven and bake for 20-25 minutes, or until the top is golden and bubbly.
