Grilled Teriyaki Steak Kabobs with Authentic Homemade Teriyaki Sauce

Ingredients

For the teriyaki sauce:

- 1/2 cup soy sauce

- 1/4 cup mirin (Japanese sweet rice wine)

- 1/4 cup sake (Japanese rice wine)

- 1/4 cup granulated sugar

- 1 tablespoon cornstarch

- 2 tablespoons water

For the kabobs:

- 1 1/2 lbs top sirloin steak, cut into 1-inch cubes

- 1 cup homemade teriyaki sauce (from the recipe above)

- 8 wooden or metal skewers

Directions

1. Make the teriyaki sauce: In a small saucepan, combine the soy sauce, mirin, sake, and granulated sugar. Heat the mixture over medium heat, stirring occasionally until the sugar is completely dissolved. In a separate small bowl, mix the cornstarch and water to create a slurry. Slowly pour the cornstarch slurry into the saucepan while continuously stirring to thicken the sauce. Once the sauce reaches your desired consistency, remove from heat and let it cool.

2. Marinate the steak: Place the steak cubes in a medium-sized mixing bowl and pour 3/4 cup of the cooled teriyaki sauce over the meat, ensuring all pieces are well-coated. Reserve the remaining 1/4 cup of teriyaki sauce for basting later. Cover and refrigerate the marinated steak for at least 1 hour, or up to overnight for better flavor.

3. Soak the skewers: If you're using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent them from burning.

4. Preheat the grill: Preheat your grill to medium-high heat (about 400°F or 200°C). Lightly oil the grill grates to prevent the kabobs from sticking.

5. Assemble the kabobs: Remove the marinated steak from the refrigerator and thread the meat cubes onto the skewers, leaving a small gap between each piece for even cooking.

6. Grill the kabobs: Place the assembled kabobs on the preheated grill and cook for 10-12 minutes, turning occasionally to ensure even cooking. During the last few minutes of grilling, brush the kabobs with the reserved teriyaki sauce.

7. Serve: Once the steak reaches your desired level of doneness, remove the kabobs from the grill and let them rest for a few minutes before serving. Enjoy your grilled teriyaki steak kabobs with a side of rice, salad, or your favorite side dish.
