Grilled Shrimp with Pineapple Salsa

This shrimp dish with a fresh pineapple salsa is perfect for entertaining around the grill! Pineapple, onion, jalapeño, and lime make the best salsa for the shrimp

 

Ingredients

  • 1 lb large shrimp, peeled and deveined

  • 2 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 2 cloves garlic, minced

  • 1 tbsp fresh lime juice

  • 2 cups pineapple, diced

  • ¼ cup red onion, finely chopped

  • 1 jalapeño, seeded and finely diced

  • 1 tbsp fresh cilantro, chopped

  • 1 tbsp fresh lime juice

  • Salt, to taste

 

Directions

  1. Combine olive oil, salt, pepper, garlic, and lime juice in a bowl. Add shrimp and marinate for 20–30 minutes in the refrigerator.

  2. Soak wooden skewers in water (if using) to prevent burning. Skewer shrimp, ensuring they are evenly spaced.

  3. Preheat a grill to medium-high heat. Grill shrimp for 2–3 minutes per side, or until they are opaque and slightly charred.

  4. In a bowl, combine pineapple, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Toss gently to mix.

  5. Arrange grilled shrimp on a serving platter and spoon the fresh pineapple salsa over the top.

  6. Serve immediately and enjoy this vibrant and flavorful appetizer!
