Grilled Shrimp with Pineapple Salsa
This shrimp dish with a fresh pineapple salsa is perfect for entertaining around the grill! Pineapple, onion, jalapeño, and lime make the best salsa for the shrimp
Ingredients
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
2 cloves garlic, minced
1 tbsp fresh lime juice
2 cups pineapple, diced
¼ cup red onion, finely chopped
1 jalapeño, seeded and finely diced
1 tbsp fresh cilantro, chopped
1 tbsp fresh lime juice
Salt, to taste
Directions
Combine olive oil, salt, pepper, garlic, and lime juice in a bowl. Add shrimp and marinate for 20–30 minutes in the refrigerator.
Soak wooden skewers in water (if using) to prevent burning. Skewer shrimp, ensuring they are evenly spaced.
Preheat a grill to medium-high heat. Grill shrimp for 2–3 minutes per side, or until they are opaque and slightly charred.
In a bowl, combine pineapple, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Toss gently to mix.
Arrange grilled shrimp on a serving platter and spoon the fresh pineapple salsa over the top.
Serve immediately and enjoy this vibrant and flavorful appetizer!
