Gluten free zucchini bread using cake mix !

Ingredients

  • 1 box Yellow cake mix King Arthur gluten free

  • 1 tablespoon ground cinnamon

  • 1/2 cup vegetable oil

  • 1/4 cup milk or water I used almond milk

  • 3 eggs

  • 2 cups coarsely shredded zucchini (about 2 medium)

Preparation

  1. Heat oven to 350°F.

  2. Spray bottoms only of two 8x4-inch loaf pans with cooking spray.

  3. In large bowl, stir cake mix, cinnamon, oil, milk and eggs until well blended.

  4. Add zucchini; mix well. Divide batter evenly between pans.

  5. Bake 45 to 50 minutes or until toothpick inserted in center comes out clean.

  6. Cool 10 minutes. Remove from pans to cooling rack. Cool completely, about 1 hour.

  7. Wrap tightly, and store at room temperature up to 2 days.
