Easy Pasta Salad
This delightful pasta salad combines the flavors of creamy mayonnaise, tangy mustard, and savory halloumi with fresh vegetables. Perfect for any gathering or a simple family meal, it’s sure to become a favorite!
Ingredients
8 ounces macaroni pasta
1 green bell pepper, diced
2 medium carrots, shredded
1 cup halloumi, diced
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon mustard
Salt and black pepper to taste
Directions
Cook the Pasta: Cook macaroni pasta according to package instructions until al dente. Drain and rinse under cold water.
Prepare the Vegetables and Cheese: Dice the green bell pepper, shred the carrots, and dice the halloumi.
Create the Dressing: In a small bowl, whisk together the mayonnaise, sour cream, mustard, salt, and black pepper.
Combine Everything: In a large bowl, combine the cooked pasta, green bell pepper, carrots, and halloumi. Pour the dressing over the top and mix until everything is well coated.
Chill and Serve: Cover and refrigerate the salad for at least 1 hour before serving to allow the flavors to meld. Serve chilled.
Notes:
You can pan-fry the halloumi for a few minutes to add a golden color and extra flavor.
Feel free to adjust the quantities of mayonnaise, sour cream, and mustard to taste.
Fresh herbs like parsley or chives can be added for a touch of brightness.
