Chunky Comfort Potato Salad
This easy potato salad recipe features tender red or Yukon Gold potatoes tossed in a creamy blend of mayonnaise, sour cream, and Dijon mustard. Packed with crunchy celery and green onions, it’s the perfect side dish for picnics, potlucks, and backyard BBQs. Chill and serve with a sprinkle of dill or paprika for a classic, flavorful finish.
Ingredients
2 pounds of red or Yukon Gold potatoes
⅓ cup mayonnaise
⅓ cup sour cream
1 tablespoon Dijon mustard
2 celery stalks, diced
2 green onions, chopped
Salt and pepper to taste
Optional: fresh dill or paprika for garnish
Directions
Rinse and scrub the potatoes. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until fork-tender (about 15-20 minutes). Drain and let cool.
In a bowl, mix mayonnaise, sour cream, and Dijon mustard until smooth.
Dice the cooled potatoes into bite-sized pieces and place them in a large bowl. Add celery and green onions. Gently fold in the dressing, being careful not to mash the potatoes.
Add salt and pepper to taste. Cover and refrigerate for at least 1 hour to let the flavors meld.
Garnish with fresh dill or a sprinkle of paprika before serving.
