Cheesy and Creamy Pesto Chicken

Creamy Pesto Chicken Recipe: Easy, Cheesy Delight! Transform simple chicken breasts into a flavor explosion with this easy creamy pesto chicken recipe. Tender boneless, skinless chicken is smothered in a rich blend of pesto, cream cheese, and gooey mozzarella. Perfect for a quick weeknight dinner!

 

Ingredients

  • 4 chicken breasts, boneless and skinless

  • ⅓ cup of pesto, homemade or jarred

  • 8 ounces of cream cheese at room temperature

  • 1 cup mozzarella, grated, divided into half cups

  • Salt and Pepper, to taste

  • ¼ teaspoon of onion powder

  • ¼ teaspoon of garlic powder

  • 2 tablespoons of extra-virgin olive oil or butter (or a combination)

 

Directions

  1. Preheat oven to 375°F. Spray a baking dish.

  2. Pat dry chicken. Make sure thickness of breasts are around the same for even cooking

  3. Heat skillet on stovetop. Add the extra-virgin olive oil (or butter or combo). Add the chicken and cook until the chicken is browned. It does not have to be cooked through.

    Remove browned chicken and place in prepared baking dish topped with spices

  4. Mix cream cheese, pesto, half of a cup of the grated mozzarella cheese in a bowl. Spread on top of the chicken.

  5. Place in preheated oven on middle rack. Bake for 35 minutes or longer depending on doneness and thickness of chicken.

  6. Add other half cup of mozzarella that was reserved to top and broil until desired color.

    Garnish with fresh basil and serve!
