Carbquik Blueberry Scones

OctoberDragonfly's low carb and low sugar blueberry scone made with carbquik baking mix, yogurt, and fresh blueberries
 

Ingredients

  • 1½ cup Carbquik baking mix

  • 2 tbsp unsalted butter

  • One 5.3 oz two good yogurt

  • 1 tsp vanilla

  • 1 egg

  • ¼ C sugar replacement (I’m using monk fruit sweetener)

  • ½ cup fresh blueberries

 

Directions

  1. Preheat oven to 375°

  2. To a bowl, add Carbquik and sugar replacement.

  3. Cut the butter into the dry ingredients.

  4. Add vanilla, yogurt, and egg mix until combined. Add fresh, blueberries, gently combining.

  5. Bake for 10 to 15 minutes or until light golden brown
