Busy Mom’s Freezer Meat Sauce + 4 recipes
Meat Sauce
2 Tbsp olive oil
2 medium onions, chopped
3 pounds of any ground meat
(you can use beef, turkey, pork chicken)
3 to 4 cloves of garlic, minced (or jarred garlic)
2-28 ounce cans of diced tomatoes (with juice,do not drain)
16 oz of tomato juice
2 tsp brown sugar (you can also use brown sugar substitute)
Salt and pepper to taste
Directions
In a skillet over medium high heat, add olive oil and onions. Allow onions to become slightly translucent, then add garlic and beef. Cook meat until it is no longer pink. Add salt and pepper to taste. Drain off any excess grease
Transfer meat into a stockpot. Next add diced tomatoes, tomato sauce, and brown sugar, and then bring to a boil. Reduce heat to medium low and let the mixture simmer until the sauce, thickens, stirring, occasionally (approximately 20-30 minutes)
Remove from heat and allow to cool and store into quart size freezer bags. For your storage make sure the freezer bags are laying flat. To defrost place the freezer bag of meat in a warm water bath until softened. Simply transferring to your refrigerator at the beginning of the day will soften it by the time you’re ready for dinner.

Sloppy Joes
3 cups of busy moms freezer meat sauce,
1 tsp of brown sugar
1/2 C ketchup
1 Tbsp Worcestershire sauce
1 tsp yellow mustard
Defrost meat sauce add all ingredients into a skillet heat thoroughly salt and pepper to taste. Serve on your toasted buns. 4-6 servings

Busy moms Italian style Goulash
3 cups busy moms freezer meat sauce
1-15 oz can of tomato sauce
1-2 tsp Italian seasoning
1-2 cloves of garlic, minced (or jarred garlic)
1-8oz bag Mozzarella or Italian style cheese
Defrost busy mom‘s freezer meat sauce. According to package and drain. Place meat sauce into a skillet add all ingredients except the cheese. Heat until thoroughly warm. Add pasta to the meat sauce and top with cheese. Then place under a broiler until the cheese is nice and bubbly.

Busy mom’s chili
3 cups busy moms freezer meat sauce
1 can black beans
1 can pinto beans
1 can kidney beans (we generally use bushes chili, ready beans, and chili sauce)
One can rotelle
1 canned diced tomatoes
2 packets chili seasoning
Place frozen Busy Mom’smom’s freezer meat sauce, all beans, tomatoes, and chili seasoning into a slow cooker. Heat on low for four hours. Top with sour cream. Hot sauce. Onions, cheese, or whatever your favorite chili toppings are.

Busy mom’s taco night
3 cups of busy moms freezer meat sauce
One can of rotelle
One packet of taco seasoning
Defrost, busy mom’s freezer meat sauce. Add meat sauce, rotelle and taco seasoning to a skillet bring to a simmer until ready to serve.
Taco night can be set up with individual bowls of shredded cheese, lettuce, olives, salsa, cilantro, sour cream, etc. served with corn or flour tortillas. This makes a fabulous taco salad.
