Blackxican Fish Tacos
Ingredients
Blackxican Fajita Seasoning
2 tbsp kosher salt
2 tbsp hatch chili powder
1 tsp cumin
1 tsp coriander
½ tsp turmeric
½ tsp ginger
½ tsp cloves
½ tsp dried Rosemary
1 tsp red chili flakes
1 tbsp granulated garlic
1 tbsp granulated onion
Yields about 4 ounces
Fish Tacos
Tortillas of your choice
Catfish filets
The Blackxican Fajita Seasoning
Clarified butter or ghee
Chopped tomato, cilantro, shallots for topping
Guacamole
4 ripe haas avocados
4 cloves garlic minced
Juice of 1 lime
2 tbsp chopped Cilantro
½ shallot or red onion
½ tbsp Fajita Seasoning
1 jalapeño
1 tomato diced
Directions
Season catfish filets with the above mentioned Fajita Seasoning blend.
In a skillet with clarified butter or ghee, sear the filets until they are golden brown, then it's time to break them apart in the butter for these tacos.
When fully cooled, garnish with some fresh chopped tomatoes, cilantro and shallots for your tacos. Assemble your Tacos and enjoy.
Guacamole: Remove flesh of avocados and add to a bowl. Mash enough to leave slightly chunky if desired. Add remaining guacamole ingredients and combine. Squeeze juice from one lime. Add salt to taste.
