Taco Salad

 

Ingredients

  • 1 recipe Tortilla Chips

  • 8 oz lean ground beef or uncooked ground turkey

  • 1/2 packet Taco seasoning

  • 1 15oz can dark red kidney beans or black beans, rinsed and drained

  • 1 cup salsa

  • 3/4 cup frozen whole kernel corn, thawed (optional)

  • 6 cups shredded leaf or iceberg lettuce

  • 1 cup chopped tomatoes

  • 1 cup chopped green sweet pepper

  • 1/2 cup green onions, thinly sliced

  • 1 cup chopped avocado (optional)

  • 3/4 cup shredded sharp cheddar cheese

 

Directions

  1. Prepare Tortilla chips. In a 2 qt saucepan, cook ground beef until browned. Drain the fat, stir in Taco seasoning, kidney beans, salsa, and, if desired, thawed corn. Bring to boiling, reduce heat, and simmer, covered, for 10 minutes.

  2. Arrange lettuce on a platter or in dishes. Top with hot meat mixture, tomatoes, sweet peppers and green onions. If desired, top with avocado. Sprinkle with cheese and serve Tortilla chips with salad. Sour cream and additional salsa are optional.
