Banana Muffins

These classic banana muffins are moist, tender, and full of rich banana flavor. Made with ripe bananas and a hint of warm spice, they bake up with a soft, fluffy crumb and golden-brown tops. Perfect for breakfast, brunch, or a quick snack, these muffins deliver homemade comfort in every bite.

 

Ingredients

  • 1 ⅓ All purpose flour.

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp ground cinnamon

  • 3 medium ripe bananas (mashed)

  • 1 large egg

  • 1 tsp vanilla extract

  • ½ cup granulated sugar

  • ½ cup salted butter melted

  • ¼ cup sour cream

    For the topping:

  • ⅓ cup light brown sugar packed

  • 4 tbs all purpose flour

  • ½ tsp ground cinnamon

  • 2 tbs salted butter cold

 

Directions

  1. Preheat oven to 375 and place 12 muffin liners in a cupcake pan.

  2. In a large mixing bowl, add flour, baking powder, baking soda, cinnamon and whisk together.

  3. In a separate mixing bowl add mashed bananas, egg, vanilla, sugar, butter and sour cream, mixing lightly between each add. Combine the wet ingredients into the dry ingredients and combine.

  4. Make the streusel topping by combining light brown sugar, flour, cinnamon and cold butter, combining into a streusel topping.

  5. Fill muffins ¾ full and put 1 tbs of streusel topping on each. Bake at 375 for 20 minutes or until toothpick comes our clean.

    Allow to cool for at least 5 minutes and then enjoy warm.
