Vegan Fried “Chicken”

 

Ingredients

  • 8 oz lions mane mushrooms

  • 3/4 cup flour

  • 3/4 cup cold water

  • 1 tsp salt + more to taste

  • 6 Tbsp cornstarch

  • 1/2 tsp baking powder

  • 1/2 tsp each garlic powder, onion powder, paprika, white pepper, more to taste

  • 1/4 tsp each cayenne and chili powder

  • 2 cups frying oil

 

Directions

  1. Heat frying oil to 350°F

  2. Gently clean the mushrooms and pat dry. Use your hands to tear the mushroom apart in large, bite-sized pieces, removing any stems that are tough.

  3. In a large bowl, toss the flour, cornstarch, baking soda, and seasonings together. Remove a few Tbsp and coat the mushrooms in the flour mixture

  4. With the rest of the flour, combine with cold water until it is a thick batter that can coat the back of a spoon.

  5. Toss each mushroom in the batter, then carefully add to the frying oil. Cook about 3 minutes on each side or until the outside is crispy.

  6. Remove the mushrooms onto a plate lined with a paper towel to drain and sprinkle with salt. Serve with some mustard sauce
