Treat Yourself Breakfast Sandwich & Savory Tomato Jam

This luxurious breakfast sandwich combines tangy tomato jam, savory steak, sautéed onions, crispy bacon, and a rich over-easy egg, all layered with buttery Manchego cheese—a Spanish cheese celebrated for its nutty, tangy flavor—on a toasted Telera roll. Perfect for a busy day of cooking, it’s indulgence made simple.

 

Ingredients

  • 1 Telera roll

  • 1–2 tbsp tomato jam(see separate recipe below, make in advance)

  • 2 slices Manchego cheese

  • 2 strips of bacon

  • 1 small onion, thinly sliced

  • 1 small steak (your choice; seasoned and cooked as described below)

  • 1 over-easy egg

  • 1 tbsp butter

  • Montreal steak seasoning

  • Salt and pepper

  • Olive oil

    Savory Tomato Jam

  • 2 lbs ripe tomatoes, chopped (Roma or vine-ripened work best)

  • 1 medium brown/yellow onion, finely diced

  • 2 tbsp olive oil

  • ⅓ cup dark brown sugar

  • ¼ cup apple cider vinegar

  • 1 tbsp honey

  • 1 tbsp Worcestershire sauce

  • 1 tsp smoked paprika

  • ½ tsp ground cumin

  • ¼ tsp cayenne pepper (optional, for a touch of heat)

  • ½ tsp garlic powder

  • ½ tsp salt (adjust to taste)

  • ¼ tsp black pepper

  • 1 sprig fresh thyme or 1/2 tsp dried thyme

  • ½ tsp red chili flakes (optional, for extra spice)

 

Directions

  1. Preheat the oven to 375°F. Rub the steak with olive oil and season generously with Montreal steak seasoning. Sear over medium-high heat in a hot skillet for 5 minutes on each side. Transfer to the oven and cook for another 5 minutes or until desired doneness. Remove, let rest for 5 minutes, and slice thinly.

  2. Fry the bacon in a skillet over medium heat until crispy. Set aside on a paper towel-lined plate.

  3. Add olive oil and the sliced onions to the same skillet. Sauté over medium heat until softened and golden brown, about 5–7 minutes. Remove and set aside.

  4. Split the Telera roll and spread butter on each half. Toast in the oven at 350°F until golden brown, about 3–5 minutes.

  5. Heat a non-stick skillet over medium heat with a little butter. Crack the egg into the skillet, season with salt and pepper, and cook until the whites are set but the yolk is still runny.

  6. Spread tomato jam on both sides of the toasted roll. Place one slice of Manchego cheese on the bottom half of the roll. Layer the sliced steak on top of the cheese. Add the sautéed onions, followed by the bacon strips. Place the over-easy egg on top of the bacon. Top with the second slice of Manchego cheese and close with the top half of the roll.

  7. Serve immediately and enjoy the perfect combination of savory, tangy, and rich flavors.

  8. Savory Tomato Jam Recipe: (make ahead of time) Heat olive oil in a large pan over medium heat. Add the diced onion and sauté until softened and translucent, about 5 minutes.

  9. Add the chopped tomatoes to the pan and cook for about 10 minutes, stirring occasionally, until they start to break down.

  10. Stir in the brown sugar, apple cider vinegar, honey, Worcestershire sauce, smoked paprika, cumin, cayenne (if using), garlic powder, salt, and black pepper. Add the sprig of thyme or dried thyme.

  11. Lower the heat and simmer uncovered, stirring occasionally, until the mixture thickens into a jam-like consistency, about 45–60 minutes.

  12. Remove the thyme sprig (if using) and adjust seasoning to taste. For a smoother texture, use an immersion blender to blend slightly while keeping some chunks for texture.

  13. Let the jam cool to room temperature before serving. Store in an airtight container in the fridge for up to 2 weeks.
