Sun-Dried Tomato Rice
This Sun-Dried Tomato Rice is packed with the sweet and tangy goodness of sun-dried tomatoes, the briny bite of olives, and a refreshing zing of lemon. This isn't your average rice – it's a flavor explosion that will transport you straight to the Mediterranean coast!
Ingredients
1 cup long grain white rice (jasmine or basmati recommended)
2 cups chicken broth or water (chicken broth adds a richer flavor!)
2 tablespoons olive oil or the flavorful oil from your sun-dried tomatoes
2 cloves garlic, minced
1 shallot or ¼ small onion, finely chopped
⅓ cup chopped oil-packed sun-dried tomatoes
¼ cup chopped olives (kalamata or your favorite!)
Zest of 1 lemon
Juice of ½ lemon
2 tablespoons chopped fresh parsley (dill or mint also work beautifully, or a mix!)
Salt and pepper to taste
Optional: a pinch of red pepper flakes for a little heat, or a touch of cumin for warmth
Directions
Sauté the Aromatics: In a medium saucepan, heat the olive oil (or sun-dried tomato oil) over medium heat. Add the minced garlic and finely chopped shallot (or onion). Sauté for 1-2 minutes, stirring occasionally, until they become fragrant and softened. Be careful not to burn the garlic!
Toast the Rice: Add the rice to the saucepan and stir for 1-2 minutes, ensuring all the grains are coated in the oil and starting to toast slightly. This step enhances the rice's flavor.
Add Broth, Tomatoes & Olives: Pour in the chicken broth (or water) and stir in the chopped sun-dried tomatoes and olives. Bring the mixture to a boil over high heat. Once boiling, cover the saucepan tightly with a lid and reduce the heat to the lowest possible simmer. Cook for approximately 15 minutes, or according to the instructions on your rice package, until all the liquid is absorbed and the rice is tender. Avoid lifting the lid during this time to ensure even cooking.
Finish with Lemon & Herbs: Once the rice is cooked and fluffy, remove the saucepan from the heat and let it sit, covered, for 5 minutes. Then, remove the lid and gently fluff the rice with a fork. Stir in the lemon zest, lemon juice, and chopped fresh herbs (parsley, dill, or mint, or a combination). Season with salt and pepper to taste. If you're feeling adventurous, add a pinch of red pepper flakes or cumin for an extra layer of flavor.
