Shredded Smoked Bologna Sandwich

 

Ingredients

  • 2 ½ pounds of Bologna

  • Texas Toast buns

  • Barbecue sauce (your choice)

  • Coleslaw (for topping)

  • Butter

 

Directions

  1. Smoke the Bologna: Preheat your smoker to 250°F.

    Score the bologna on all sides by making shallow cuts in a crisscross pattern. This helps the smoke penetrate the meat.

  2. Place the bologna on the smoker and smoke it for about 2-3 hours, or until it is fully heated.

    Remove the bologna from the smoker and let it cool slightly.

  3. Once the bologna is cool enough to handle, shred it using a cheese grader.

  4. Heat a skillet over medium heat and add the butter. Once the butter is melted, place the Texas toast down on the skillet and toast until golden brown.

  5. Place a generous amount of shredded smoked bologna on the bottom half of each bun. Drizzle with barbecue sauce. Top with coleslaw, and place the top bun over the fillings.
