Sausage and Purple Cabbage Skillet

Sometimes the best laid plans go awry. When I was planning for this LIVE. I expected to be able to find a couple ingredients for a different dish. But when I couldn’t find them, instead I went through my refrigerator and my cabinets and decided to work with what I had, and I present to you my ground, sausage skillet with vegetables and pickled sweet, cabbage, and apples. Sausage & Purple Cabbage Skillet

Ingredients

  • 24 ounce jarred purple cabbage & apple (German Style)

  • 1lb bulk ground pork

  • 1 Granny Smith Apple

  • 1 yellow or orange sweet pepper

  • 1 cup sliced mushrooms

  • 1-2 leeks (white to lite green section only)

  • 5-6 cooked bacon chopped

  • 2 medium potatoes skin on, small dice

  • 1/4 tsp Red pepper flakes

  • 1/2 tsp ground fennel

  • 1 tsp whole fennel seed

  • 1 tsp dried parsley

  • 1/2 stick unsalted butter

  • 1 tsp poultry seasoning (optional)

  • Salt & Pepper to taste

  • Sunflower oil

Instructions

  1. In an electric skillet on medium heat add sunflower oil (2 tsp) and 1 tsp bacon grease

  2. Add sausage and cook 8-10 min. Don’t over stir it. You want chunks and some brown searing. Remove from the skillet and set aside.

  3. Remove all but 2 tsp of fat.

  4. Add the diced potatoes, and bacon, toss in the fat and cover for 3-5 min until a knife slides in easily.

  5. Add red pepper flakes, stir

  6. Add the leeks, pepper and mushrooms. Stir occasionally covered, 6-8 mins.

  7. And seasonings and drained cabbage. Stir, cover 3 -5 min.

  8. Add diced apple, add butter and stir, turn off the heat and cover.

  9. Taste for any more seasonings

  10. Serve over rice or alone in a bowl

Additional options include:

  • Adding a slash of apple cider vinegar or lemon

  • Dont use potatoes and use the mix as a filling in hollowed out baked potatoes.
