Prime Rib Taco Filling

Leftover prime rib, onion, herbs, and Guajillo chili oil are a perfect filling for homemade blue corn tortillas

 

Ingredients

  • 1.5 pounds Holiday prime rib, diced

  • ¼ white onion, diced

  • ¼ cup cilantro, roughly chopped

  • Juice of half a lime

  • A pinch of Mexican oregano

  • A small pinch of cumin

  • Salt to taste

  • Guajillo chili oil

  • Homemade Blue Corn Tortillas

 

Directions

  1. Heat a pan over medium-high heat. Sauté the diced prime rib with the diced onion, cilantro, lime juice, Mexican oregano, cumin, salt, and Guajillo chili oil until the meat is crispy and flavorful.

  2. Compose your tacos using the homemade corn tortillas, prime rib filling, and the previously made salsas (roasted tomatillo salsa, roasted tomato salsa, and avocado/guacamole salsa).
