Porcupine Meatballs

Porcupine Meatballs 

Ingredients

  • 1 to 1 1/2 pounds of ground beef 

  • 3/4 c rinsed rice

  • 1 small onion 

  • 3 cloves of diced garlic  

  • Salt and pepper to taste 

Preparation

  1. In a separate bowl mix and add to meat mixture; 1/2 to 3/4 cup of ketchup, 1 heaping teaspoon of Better than Bouillon , 2 tsp Worcestershire sauce 

  2. Mix well and roll into 1 or 1 1/2 inch meatballs. Arrange in a casserole dish.

    Cooking sauce for the top of the meatballs

    • 1 can of tomato soup

    • 1 can a water

    • 1/2 c.  (or to taste) Alfredo sauce 

    • Mix well and pour over the meatballs.

    • Cover with foil and bake at 350° for about 40 minutes.

    • Remove the foil and bake for another 20 minutes.

    Keep an eye on it because oven temperatures vary.
