Ingredients

  • 1 T-bone steak, room temperature (20-30 minutes)

  • Salt and black pepper, to taste

  • 1-2 tbsp high-smoke-point oil (e.g., avocado, canola, or grapeseed oil)

  • 2 tbsp unsalted butter

  • 2-3 sprigs fresh thyme or rosemary

  • 2 garlic cloves, crushed

 

Directions

  1. Preheat: Preheat the oven to 375°F (190°C).

  2. Season: Season the steak generously with salt and black pepper on both sides.

  3. Prepare skillet: Heat a heavy skillet (cast iron preferred) over high heat. Add the oil and let it shimmer.

  4. Sear: Place the steak in the hot skillet and sear for 5 minutes on one side without moving it.

  5. Flip & Baste: Flip the steak, add butter, herbs, and crushed garlic to the pan. Tilt the skillet slightly and use a spoon to baste the steak with the melted butter for about 1-2 minutes.

  6. Bake the Steak: Transfer the steak to a sheet pan with a wire rack. Place it in the preheated oven and cook until it reaches an internal temperature of 130°F (54°C) for medium-rare. This should take about 5-10 minutes, depending on thickness.

  7. Rest: Remove the steak from the oven and let it rest for 5-10 minutes before slicing.
