Pepperoni Puffs
On my live last week, I shared a Cowboy Grinder recipe based on a Trisha Yearwood recipe called Cowboy Lasagna. Another dish I made were these little Pepperoni Puffs. Now I made these in a muffin pan. but they are equally as good if you scopped them out as small “puffs” and make’m like “poppers”. Also key to this recipe is that not only are they easy to make, they freeze beautifully!

Pepperoni Puffs
Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1 cup milk
¼ cup grated Cheddar cheese
1 cup diced pepperoni
1 egg
Directions
Pre-heat oven to 350 degrees
Combine first 5 ingredients and mix thoroughly.
Add pepperoni and mix until evenly distributed throughout the mixture.
Allow batter to stand for 15 minutes.
Grease mini-muffin pans or spray with nonstick vegetable spray.
Fill each cup ¾ full. ( this will make 10 -12 regular muffins. If you use a small portion scoop - you can get upwards of 40-50 puffs
Bake at 350° for 25-35 minutes or until browned.
