Mexican Restaurant Style Salsa

Ashton (@Justlikegranny), even living in Sweden, can bring some “south of the border” flavors to the table. In this recipe she shares a version of a Mexican restaurant style salsa that anyone can make.

Mexican Restaurant Style Salsa 

Ingredients:

  • 6 medium-sized fresh tomatoes

  • 1/2 cup diced onion

  • 1/4 cup fresh cilantro leaves

  • 2 cloves garlic, minced

  • 1 jalapeño pepper, seeded and minced

  • 2 tbsp lime juice

  • 1 tsp salt

  • 1 tsp ground cumin

Instructions:

  1. Bring a large pot of water to a boil. Cut a small "X" on the bottom of each tomato and drop them into the boiling water.

  2. Boil for 30 seconds, then remove the tomatoes with a slotted spoon and place them into a bowl of ice water to cool.

  3. Once the tomatoes are cool enough to handle, peel off their skins and remove the core.

  4. Cut the tomatoes in half and gently squeeze out the seeds and excess liquid.

  5. Roughly chop the tomato flesh and place it in a food processor or blender.

  6. Add the diced onion, cilantro, minced garlic, and minced jalapeño pepper to the tomato mixture and pulse until the ingredients are roughly chopped and combined, but still slightly chunky.

  7. Add the lime juice, salt, and ground cumin to the tomato mixture and pulse a few more times to combine.

  8. Taste the salsa and adjust the seasoning to your liking.

  9. Transfer the salsa to a large serving bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.

    This recipe should make about 4 cups of salsa.

    Serve with tortilla chips and enjoy!
