Peach Salsa Pork Tenderloin

This quick recipe is reminiscent of an Asian stir fry without any of the Asian ingredients. The rice will take 20 minutes unless you are using brown or wild rice. It’s a quick and easy week night meal.
Ingredients:
1 1/2 cups Jasmine Rice (uncooked)
1 lb pork tenderloin, cut into 1-in cubes
2 Tbsp olive oil
2 Tbsp reduces-sodium taco seasoning
1 cup salsa
1/4 cup peach preserves
Instructions:
Cook rice according to package directions.
Meanwhile, in a large bowl, drizzle pork with olive oil and taco seasoning.
Add seasoned pork to a nonstick skillet over medium heat and cook until no longer pink, 8-10 minutes.
Stir in salsa and preserves and heat through.
Serve over rice.
