Peach Pork Stir Fry
Ingredients
1-1/2 cups cooked rice
1 lb pork tenderloin, cut into 1-inch cubes
2 Tbsp Olive Oil
2 Tbsp taco seasoning
1 cup salsa
3 Tbsp peach preserves
Directions
Place pork in a large bowl and drizzle with oil. Sprinkle with taco seasoning; toss to coat.
Place a large nonstick skillet over medium heat. Add the pork; cook and stir until no longer pink, about 10 minutes. Stir in salsa and preserves; heat through.
Serve with rice.
