Peach Pork Stir Fry

 

Ingredients

  • 1-1/2 cups cooked rice

  • 1 lb pork tenderloin, cut into 1-inch cubes

  • 2 Tbsp Olive Oil

  • 2 Tbsp taco seasoning

  • 1 cup salsa

  • 3 Tbsp peach preserves

 

Directions

  1. Place pork in a large bowl and drizzle with oil. Sprinkle with taco seasoning; toss to coat.

  2. Place a large nonstick skillet over medium heat. Add the pork; cook and stir until no longer pink, about 10 minutes. Stir in salsa and preserves; heat through.

  3. Serve with rice.
