One 9 inch graham cracker crust
8 oz cream cheese, softened
½ cup powdered sugar
1 tsp vanilla extract
1 cup heavy whipping cream
2 apples, peeled and diced (Honeycrisp or Granny Smith)
2 tbsp butter
2 tbsp brown sugar
1½ tsp cinnamon, separated
½ cup oats
¼ cup flour
¼ cup brown sugar
3 tbsp butter, melted
½ tsp cinnamon
Directions
Beat cream cheese, powdered sugar, and vanilla until smooth. In a separate bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture. Spread over the crust.
In a pan, melt butter over medium heat. Add diced apples, brown sugar, and 1 tsp cinnamon. Cook until apples are soft and caramelized (about 5 minutes). Let cool slightly, then spoon over the cheesecake layer.
Mix oats, flour, brown sugar, ½ tsp cinnamon, and melted butter until crumbly. Toast in a pan for 3-4 minutes. Sprinkle over the apples.
Refrigerate for at least 30 minutes before serving. Enjoy!
