Mixed Berry Cheesecake Biscuit Bites

Trini's Cheesecake Bites are so delicious, you wouldn't believe they're so easy! Biscuit dough is wrapped around a mixture of cream cheese, mixed berries, and lemon, and drizzled with a mixed berry glaze
 

Ingredients

  • 1 can (8 biscuits) refrigerated biscuit dough

  • 4 oz cream cheese, softened

  • 2 tbsp powdered sugar (plus more for dusting, if desired)

  • ½ cup frozen mixed berries, thawed and drained

  • 1 tbsp granulated sugar

  • 1 tsp lemon juice

  • 1 tsp vanilla extract

  • 2 tbsp butter, melted

  • ½ tsp ground cinnamon, divided

  • 1 tbsp granulated sugar (for topping)

 

Directions

  1. Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.

  2. In a small bowl, combine the thawed and drained mixed berries, 1 tbsp granulated sugar, and lemon juice. Stir gently to coat the berries and let them sit for a few minutes.

  3. In another bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth. Mix in the mixed berries.

  4. Separate the biscuits and gently flatten each one to about 3-4 inches in diameter. Place a small spoonful (about 1-2 tsp) of the cream cheese mixture in the center of each flattened biscuit.

  5. Fold the biscuit dough over the filling, pinching the edges to seal well. Place each filled biscuit seam-side down in the muffin tin.

  6. In a small bowl, mix 1 tbsp. sugar and ¼ tsp cinnamon. Brush the tops of each biscuit with melted butter, then sprinkle with the cinnamon-sugar mixture.

  7. Bake for 12-15 minutes, or until the biscuits are golden brown and cooked through.

  8. Let the bites cool slightly, then dust with powdered glaze. (optional) Serve warm for the best flavor and texture!
