Mini Crudite Cups With Homemade Ranch Dressing

Mini Crudite Cups With Homemade Ranch Dressing

INGREDIENTS

  • 2-3 carrots cut into sticks

  • 2-3 ribs celery cut into sticks

  • 1 lg. red bell pepper thinly sliced

  • 1 lg. yellow bell pepper thinly sliced

  • 36 fresh green beans ends removed

  • 24 young asparagus stalks

Dip of choice; Ranch dressing, Green Goddess, Hummus, Yogurt •12 plastic cups or small jars We suggest one below.

OPTIONAL 

  • Grape tomatoes or cherry tomatoes Endive leaves
    Radishes, cut in half
    Baby romaine leaves 

  • Broccoli 

DIRECTIONS

  1. Prep all veggies ahead of time.

  2. Place 2 tablespoons of desired dip of choice into each cup.

  3. Add 3 carrot sticks, 3 celery sticks, 3 slices of red pepper, 3 slices of yellow pepper and 3 green beans to each cup. Garnish with a grape tomato.

  4. Refrigerate until ready to serve. 

Ashton’s Ranch Dressing

INGREDIENTS

  • 1 C. Mayonnaise

  • 1 C. Buttermilk

  • 1⁄2 TSP Dried Parsley

  • 1⁄2 TSP Onion Powder

  • 1⁄2 TSP Garlic Powder •1⁄2 TSP Salt 

  • 1⁄2 TSP Black Pepper •1⁄2 TSP MSG
    2 Pinches of Thyme 

DIRECTIONS 

1. In a blender or food processor add all of the ingredients and blend. 

If your ranch is too watery you can add more mayonnaise, xanthan gum or a thickener of your choice. If you use xanthan gum, use 1⁄4-1⁄2 TSP mixed with 1 TBSP of Olive Oil and then add it to your ranch dressing and blend again. 

2. Place in an airtight container and store in the refrigerator for up to one and half weeks to two weeks. 

How long you keep it is up to you. Shake well before each use. Refrigerate at least thirty minutes before serving. For best results wait overnight..
