Mediterranean Potato Salad
Ingredients
3 pounds of baby potatoes
1 ⅔ cups of Greek yogurt
2 grated garlic cloves
¼ cup of extra virgin olive oil
4 Tbsp of red vinegar
2 tsp of dry oregano
Salt & pepper
3 fresh green onions, in slices
1 green pepper, chopped
½ onion, chopped
4 Tbsp dill
Directions
Boil the potatoes for approximately 25-30 minutes or until done. Drain and rinse with cold water.
Combine the remaining ingredients and toss in the potatoes.
