Ingredients

  • 3 pounds of baby potatoes

  • 1 ⅔ cups of Greek yogurt

  • 2 grated garlic cloves

  • ¼ cup of extra virgin olive oil

  • 4 Tbsp of red vinegar

  • 2 tsp of dry oregano

  • Salt & pepper

  • 3 fresh green onions, in slices

  • 1 green pepper, chopped

  • ½ onion, chopped

  • 4 Tbsp dill

 

Directions

  1. Boil the potatoes for approximately 25-30 minutes or until done. Drain and rinse with cold water.

  2. Combine the remaining ingredients and toss in the potatoes.
