Loaded Potato Soup

Loaded Potato Soup
Ingredients:
6 slices of bacon (more if you want some for garnish)
4 tablespoons of butter
1 yellow onion, chopped.
4 tablespoons of flour
3 cups of heavy whipping cream
3 cups of chicken stock. (I make mine with water and “better than bouillon” paste- It does make all the difference).
4 large potatoes peeled and chopped
1/2 cup of sour cream
1 package of shredded cheddar cheese
salt and pepper to taste.
diced green onion for garnish
Preparation:
Cube and fry the bacon until crispy. Drain on paper towels and set aside.
In a soup pot add 4 tablespoons of butter, one yellow onion, chopped.
Cook until translucent
Add 4 tablespoons of flour to the pan to make a roux.
Cook 2 to 3 minutes and then add 3 cups of heavy whipping cream and 3 cups of chicken stock. (I make mine with water and Better than Bouillon paste- It does make all the difference).
Add the potatoes and cook on low for 20 minutes or until potatoes are soft.
Stir in a half a cup of sour cream, one package of cheddar cheese, salt and pepper to taste.
Bowl up and garnish with crumbles and diced green onion.
