Loaded Potato Soup

Ingredients:

  • 6 slices of bacon (more if you want some for garnish)

  • 4 tablespoons of butter

  • 1 yellow onion, chopped.

  • 4 tablespoons of flour

  • 3 cups of heavy whipping cream

  • 3 cups of chicken stock. (I make mine with water and “better than bouillon” paste- It does make all the difference).

  • 4 large potatoes peeled and chopped

  • 1/2 cup of sour cream

  • 1 package of shredded cheddar cheese

  • salt and pepper to taste.

diced green onion for garnish

Preparation:

  1. Cube and fry the bacon until crispy. Drain on paper towels and set aside.

  2. In a soup pot add 4 tablespoons of butter, one yellow onion, chopped.

  3. Cook until translucent

  4. Add 4 tablespoons of flour to the pan to make a roux.

  5. Cook 2 to 3 minutes and then add 3 cups of heavy whipping cream and 3 cups of chicken stock. (I make mine with water and Better than Bouillon paste- It does make all the difference).

  6. Add the potatoes and cook on low for 20 minutes or until potatoes are soft.

  7. Stir in a half a cup of sour cream, one package of cheddar cheese, salt and pepper to taste.

  8. Bowl up and garnish with crumbles and diced green onion.

It's so good!
