Halibut With Citrus Salsa

 

Ingredients

  • 2 tbsp fresh orange juice

  • 1 tbsp extra-virgin olive oil

  • 1 tsp grated orange peel, grapefruit peel and lime peel, each

  • 1/4 tsp salt

  • 1/4 tsp freshly ground pepper

  • 4 halibut fillets (about 6 oz/175 g each)

    Citrus Salsa

  • 1/2 cup chopped orange segments

  • 1/2 cup chopped grapefruit segments

  • 1/4 cup chopped lime segments

  • 1/4 cup diced red onion

  • 2 tbsp chopped fresh cilantro

  • 2 tbsp honey

  • 1 tbsp finely chopped seeded jalapeno pepper

  • 1 tbsp extra-virgin olive oil

  • 1 tsp grated orange peel, grapefruit peel and lime peel

  • 1/4 tsp salt

  • 1/8 tsp freshly ground pepper

    Combine all salsa ingredients. Serve immediately.

 

Directions

  1. Preheat oven to 425°F. Line a rimmed baking sheet with nonstick foil. Combine orange juice, oil, orange peel, grapefruit peel, lime peel, salt and pepper.

  2. Place fillets on prepared pan. Brush tops of fillets with orange juice mixture. Bake, uncovered, for 12 - 15 minutes per inch (2.5 cm) of thickness or until fish flakes easily with a fork.

  3. Serve with Citrus Salsa.
