Grilled Cabbage
Ingredients
½ head of cabbage
3 Tbsp neutral oil
Salt
3 Tbsp düsseldorf mustard (dijon substitute)
2 Tbsp crema
1 Tbsp maple syrup
2 tsp malt vinegar
Chives
1 lemon
Directions
Preheat your grill to medium high heat and oil the grates.
Cut the half cabbage into 4 wedges, making sure to keep the core intact by slicing at the core.
Brush the cabbage on all sides with olive oil and add salt.
Whisk together the mustards, crema, malt vinegar, maple syrup, and some chives. Set aside.
Place the cabbage on the grill at a 45° angle on the grates. Let them grill for a few minutes, then give the wedges a 90° turn. This is how we get the cross hatch pattern. Flip the wedges and char the other side the same way. Remove from the grill when the char marks are visible.
While the cabbage is grilling, slice a lemon in half and add to the grill, cut side down, until the lemon is charred.
Place the wedges on a platter. Squeeze one half of the lemon over the top of the cabbages, then pour the sauce over the top. Serve with the additional lemon wedge and additional chives if desired.
