Garlicky Shrimp Scampi
Ingredients
2 lbs. thawed raw, peeled, deveined shrimp - 21/30 count
• 1 stick unsalted butter
• 1 medium onion chopped
• 6-8 cloves of fresh garlic chopped
• 1 bay leaf
• ½ teaspoon black pepper, or to taste
• ½ teaspoon red pepper flakes, or to taste
• 2 TB dried oregano
• 2 TB Worcestershire sauce
• 5 squirts Louisiana hot sauce
• ½ cup olive oil
• small bunch parsley chopped
• Juice of 1 lemon
• ½ cup Bread crumbs
Directions
Thaw, rinse, and drain the shrimp. Be sure to remove the shells if they are still on. You can leave the tail for extra flavor and a "handle".
Melt butter in a large glass measuring cup with the onion and garlic. Mix in the bay leaf, peppers, oregano, worcestershire and hot sauces, lemon juice of half lemon, olive oil and parsley.
Arrange the shrimp in a 13 x 9 casserole dish. Pour the butter mixture on top and mix in. Sprinkle the top with the bread crumbs.
Bake at 400F for 25 minutes or until the butter is bubbling, and the shrimp are pink. You can turn the broiler on for the last 5 minutes for extra browning on top.
Garnish with chopped parsley and lemon wedges
