Garlic Butter Broccolini

Ingredients
6–8 broccolini stalks, trimmed and cleaned
Reserved warm chicken stock (from risotto prep)
½–1 tbsp unsalted butter
1–2 garlic cloves, halved
1 small chunk shallot or onion
Salt & pepper to taste
Directions
Blanch broccolini in hot chicken stock for 20–40 seconds.
Transfer to ice water. Once cooled, dry on a towel.
Reheat the same pan used for chicken. Add broccolini and let it sear for 30 seconds without touching.
Flip and add butter, garlic, and shallot. Sauté for 2–3 minutes until tender-crisp.
Season with salt and pepper.
Optional: For a softer texture, add a splash of chicken stock, cover, and steam 3–5 minutes.
