Ingredients
1¼ cup butter (salted)
1 cup creamy peanut butter
1½ cups light brown sugar firmly packed
½ cup sugar
1¾ tsp vanilla
2 large eggs room temp preferred
2 cups all purpose flour
1½ tsp baking soda
1¼ tsp salt (if butter is unsalted)
Directions
Preheat over to 350 degrees
In a large bowl of a stand mixer combine butter, peanut butter, brown sugar and sugar and mix until well combined.
(You may also use a hand mixer)
Add eggs and vanilla and continue to stir, pausing to scrape the sides.
In a seperate bowl, whisk flour, baking soda and salt if using unsalted butter and slowly add to wet ingredients until fully combined.
Using a 1½ inch cookie scoop, scoop the dough and scrape across the top. Drop the cookie directly onto a parchment paper lined cookie sheet and bake at 35p degrees for 10-12 minutes.
Allow to fully cool before adding in homemade marshmallow fluff between. These also do make great peanut butter cookies by themselves if you don't mind a flatter peanut butter cookie.
