Ingredients

  • 1¼ cup butter (salted)

  • 1 cup creamy peanut butter

  • 1½ cups light brown sugar firmly packed

  • ½ cup sugar

  • 1¾ tsp vanilla

  • 2 large eggs room temp preferred

  • 2 cups all purpose flour

  • 1½ tsp baking soda

  • 1¼ tsp salt (if butter is unsalted)

Directions

  1. Preheat over to 350 degrees

  2. In a large bowl of a stand mixer combine butter, peanut butter, brown sugar and sugar and mix until well combined.

    (You may also use a hand mixer)

  3. Add eggs and vanilla and continue to stir, pausing to scrape the sides.

  4. In a seperate bowl, whisk flour, baking soda and salt if using unsalted butter and slowly add to wet ingredients until fully combined. 

  5. Using a 1½ inch cookie scoop, scoop the dough and scrape across the top. Drop the cookie directly onto a parchment paper lined cookie sheet and bake at 35p degrees for 10-12 minutes. 

  6. Allow to fully cool before adding in homemade marshmallow fluff between. These also do make great peanut butter cookies by themselves if you don't mind a flatter peanut butter cookie.
