Crowd-Pleasing Couscous
This recipe has been tested by many crowds, and this pleases them all! Israeli couscous, onion, dried apricots, and beef broth makes this simply perfect dish.
Ingredients
2 tablespoons olive oil
½ medium red onion, diced
¼ cup chopped dried apricots
1 ¾ cups Israeli couscous
¾ cup beef broth
1½ teaspoons salt
Directions
Heat the olive oil in a medium pot over medium heat. Add the onions and saute for a few minutes, until softened. Add the dried apricots and couscous, and cook for 2 minutes to toast the couscous.
Add 1¼ cups water, the beef broth and the salt, and bring to a boil. Turn the heat down to low, cover and cook, stirring occasionally, until the liquid is absorbed and the couscous is tender, about 10 to 12 minutes.
Transfer the couscous to a serving dish and serve warm.
