Crowd-Pleasing Couscous

This recipe has been tested by many crowds, and this pleases them all! Israeli couscous, onion, dried apricots, and beef broth makes this simply perfect dish.

 

Ingredients

  • 2 tablespoons olive oil

  • ½ medium red onion, diced

  • ¼ cup chopped dried apricots 

  • 1 ¾ cups Israeli couscous 

  • ¾ cup beef broth 

  • 1½ teaspoons salt 

 

Directions

  1. Heat the olive oil in a medium pot over medium heat. Add the onions and saute for a few minutes, until softened. Add the dried apricots and couscous, and cook for 2 minutes to toast the couscous.

  2. Add 1¼ cups water, the beef broth and the salt, and bring to a boil. Turn the heat down to low, cover and cook, stirring occasionally, until the liquid is absorbed and the couscous is tender, about 10 to 12 minutes.

  3. Transfer the couscous to a serving dish and serve warm.
