Creole Dirty Rice with Shrimp
Ingredients
1 lb ground beef
1 lb spicy sausage
2 lbs jumbo uncooked shrimp
1 medium onion diced
1 bell pepper diced
1 cup celery diced
1 bulb garlic minced
2 tbsp Creole seasoning
1/2 teaspoon kosher salt
4 cups jasmine rice uncooked
6 cups beef stock
chopped green onion or parsley for garnish
Directions
In a Dutch oven, brown meat together. Remove meat from heat.
Sauté garlic and onion until fragrant, adding a pinch of salt. Add meat back to the pan and then add peppers and celery. Cook for 5 minutes on medium heat and then add your rice.
Incorporate all the ingredients while using the rice to scrape the fond off the bottom of pan.
Add beef stock and then cover to simmer for 15 minutes on medium low heat.
Pan sear shrimp and add to the rice and cook for an additional 5 minutes .
When rice is fluffy and properly cooked, shut stove off and let sit on stovetop for a few minutes.
