Cowboy Chow & Rice

Cowboy Chow & Rice is a hearty, family-friendly dinner packed with savory sausage, sautéed peppers and onions, smoky barbecue sauce, and fluffy jasmine rice. Served with classic baked beans and a sprinkle of fresh herbs, this easy comfort food recipe is perfect for busy weeknights. It's a simple, satisfying meal that brings bold, smoky flavors to the table fast.

 

Ingredients

  • 2 cups jasmine rice

  • 2 teaspoons salt

  • 2 packages sausage links

  • 1 package frozen onions and peppers

  • 1 cup barbecue sauce

  • 1 family-size package or large can baked beans

  • Garnish: Green onions or parsley

 

Directions

  1. Rinse the jasmine rice under cold water until the water runs clear. Add the rice, 4 cups of water, and 2 teaspoons of salt to a rice cooker. Stir and taste the water to adjust seasoning if needed. Turn on the rice cooker and cook according to your machine’s instructions.

  2. Pour the baked beans into a small saucepan and warm over low heat, stirring occasionally.

  3. Slice the sausage links on a bias (diagonal cuts). Heat a large skillet over medium heat and add the sliced sausage. Cook for about 5 minutes, or until browned on one side, then flip and brown the other side. Remove the sausage from the skillet and set aside in a bowl.

  4. In the same skillet with the sausage drippings, add the thawed and drained frozen onions and peppers. Season with salt and pepper. Cook over medium heat, stirring occasionally, until most of the moisture has evaporated, about 10 minutes.

  5. Add the barbecue sauce to the skillet with the vegetables. Stir in a splash of water if needed to achieve your desired sauce consistency. Return the cooked sausage to the skillet and stir everything together until heated through.

  6. Spoon the cooked rice onto plates. Top the rice with the cowboy chow. Surround the rice with a scoop of warm baked beans. Garnish with chopped green onions or parsley before serving.
