Cornbread and Haluski - Pittsburgh Staple

I wanted to make my first meal for this challenge something extremely affordable and accessible in my community. Something delicious, easy and close to home. As soon as I saw my list, I immediately knew I would be using the cabbage and onions for a version of the classic Pittsburgh style Haluski.
I wasn't given noodles in my package so I opted for a carbohydrate that relies on minimal pantry essentials and also makes you feel right at home. So I went with cornbread.
I found my recipe for the cornbread on the food52 blog and I can say, it was absolutely delicious! So moist and the perfect balance between sweet and salty. My family didn't notice a difference from my normal recipe. And the best part - it can easily be made vegan by using almond or soy milk!!

Cornbread recipe -
Ingredients;
2 tsp apple cider vinegar
2 c. milk
1.5 c. corn meal
1 c. Flour
1 tsp salt
1/2 tsp baking soda
1. 5 tsp baking powder
6 tbsp sugar
1/3 c. canola oil
Combine the cider vinegar and milk, set aside
Mix together the corn meal, flour, salt, baking soda, baking powder and sugar
Combine the dry mix with the in milk mixture
Once mixed, add in canola oil
Bake in oven on 400° for 35-40 minutes
Haluski -
Ingredients:
1/2 of head of cabbage
2 Onions
4 Hotdogs
Butter (unsalted)
Salt & Pepper to taste
Thinly slice cabbage and hot dogs, dice onions to preferred size slices
Melt 2 tbsp butter in pan on medium heat
Add diced onions, salt and pepper
Once onions start to get some color, add in cabbage.
Season with garlic salt and pepper. Add 3 tbsp more butter.
Cover and cook until cabbage is softened and developed in flavor.
Add slices hot dogs to pan and sear, toss with cabbage and onions.
Serve with cornbread & butter
