Cod Piccata

Delight your palate with this tangy and savory Cod Piccata. Fresh cod fillets are paired with a zesty lemon and caper sauce to create a refreshing dish perfect for any occasion.

 

Ingredients

  • 4 cod fillets (about 6 oz each)

  • Salt and pepper, to taste

  • 1/2 cup all-purpose flour, for dredging

  • 4 tablespoons unsalted butter

  • 1/4 cup fresh lemon juice

  • 1/4 cup chicken stock or fish broth

  • 1/4 cup brined capers, rinsed

  • 1/4 cup fresh parsley, chopped

  • 1 tablespoon olive oil

 

Directions

  1. Season cod fillets with salt and pepper.

  2. Dredge the fillets in flour, shaking off excess.

  3. In a large skillet over medium-high heat, melt 3 tablespoons of butter with the olive oil. When butter and oil start to sizzle, add the fillets and cook for about 5 minutes on each side until browned. Remove fillets and set aside.

  4. Add lemon juice, chicken stock, and capers to the skillet. Bring to boil, scraping up browned bits from the pan for extra flavor.

  5. Check seasoning, adding more salt and pepper if needed. Return all the fillets to the pan and simmer for 2 minutes.

  6. Remove fillets to platter. Add remaining 1 tablespoon butter to the sauce and whisk vigorously. Pour sauce over fish and garnish with parsley.

    Notes to Make It Better: Ensure your skillet is properly heated before adding the fish to achieve a beautiful golden-brown sear. • For an added touch, grate some fresh lemon zest over the fish just before serving for a zesty kick. • Consider serving alongside a light salad or steamed vegetables to balance out the dish.
