Christmas Tree Salad

 

Ingredients

  • 1 head romaine lettuce

  • 5 oz grape tomatoes, halved

  • 1/2 red onion, diced

  • 2 hard boiled eggs

  • 4 strips bacon, diced and cooked

  • 3 mini red peppers, 2 of them diced

  • 3 mini yellow peppers, 2 of them diced

  • 2 eggs, diced

  • 2 Tbsp grated cotija

  • Balsamic glaze

    Creamy ranch dressing

  • 1/2 cup mayo

  • 1/2 cup milk

  • 1 Tbsp ranch seasoning or half a packet

 

Directions

  1. Wash and cut the romaine in half. Lay the leaves on an oval tray or sheetpan, with the larger leaves at the bottom and the smaller at the top.

  2. Decorate your tree with the diced bacon, egg, onion, and peppers, making sure to get them inside the leaves.

  3. Using a star cookie cutter or your mad cutting skills, cut a star out of one of the yellow peppers for a star on top. Cut boxes out of the red pepper for presents, adding sliced cheese as the ribbon for the presents if desired.

  4. Use the balsamic glaze to make a zig zag pattern on your tree. Add the tomatoes to the tree

  5. Sprinkle the cotija (or finely grated parm) on the tree, and serve with your dressing of choice
