Chocolate Chip Cookie Cake

 

Ingredients

  • ¾ cup butter

  • ¾ cup brown sugar, light or dark tightly packed

  • ⅔ cup sugar

  • 1 egg

  • 1 egg yolk

  • 1 ½ tsp vanilla extract

  • 2 cups all purpose flour

  • 1 ½ tsp cornstarch

  • ½ tsp baking powder

  • ¾ tsp salt if using unsalted butter*

  • 1 cup semi sweet chocolate chips

 

Directions

  1. Add butter and sugars to stand of electric mixer and mix until thoroughly combined. Add in egg and egg yolk and vanilla and mix again.

  2. In a seperate bowl, combine flour, cornstarch and baking powder and whisk together. Add the dry ingredients to the wet ingredients a few parts at a time until fully combined. Mix in the chocolate chips.

  3. Wet a piece of parchment paper to line a 10 inch cake pan. Apply a wet dampen strip to the outside of the cake pan. If you skip this step or don't have one, the edges will be cruncher than the middle.

  4. Bake at 350 for 30 min. Use a toothpick to ensure dough is fully cooked. Allow to completely cool before decorating.
