Ingredients
Taco Seasoning
4 Tbsp Chili Powder
2 Tbsp Cumin
1 tsp Oregano,
1 tsp Garlic Powder,
1 tsp Onion Powder,
Pepper, &Salt
1 Tbsp Corn Starch (optional) Marinate
1 Tbsp Paprika,
1 tbsp Curry Powder
2.5 lbs Skinless Chicken Thighs
1 pack Corn Tortilla Shells
1 Red Pepper,
1 Green Pepper,
1 Onion
1 stalk Cilantro,
2 Limes
7 tsp olive oil or butter
1 tsp Cayenne,
1 tsp Onion Powder,
1 tsp Oregano,
1 tsp Salt, & Brown Sugar
1/2 tsp Cumin
1/2 tsp Black Pepper
Directions
1. In a small bowl, mix chili powder, cumin, oregano, garlic powder, onion powder, pepper, & salt.
2. Slice chicken and add marinate seasonings (do not add salt), cover and sit for 3hrs or overnight.
3. Preheat skillet medium heat with 3 Tbsp of olive oil; add chicken and cook on both sides for 5/6 mins.
Add 1/3 of the taco seasoning and stir until completely covered; remove chicken.
4. Slice peppers and onion, add 3 Tbsp olive oil to the same skillet, med. heat, add veggie mix. Cook until tender (about 8 mins), stirring or tossing occasionally.
5. Warm corn tortillas in a warmer or in a skillet with 1 tsp olive oil or butter.

NOTE: If cornstarch is used do not drain the grease and add cornstarch to taco seasoning mixture. Garnish fajitas with cilantro; you can add salsa, sour cream, cheese, gauc or whatever toppings of your liking.
