Chicken Alfredo Stuffed Shells

Ingredients

  • 1 box jumbo shells cooked to package directions

  • 2 bags frozen broccoli florets, microwaved to package directions

    Shell Filling

  • 1 1/2 cups cottage cheese

  • Salt and pepper to taste

  • 3/4 cup mozzarella shredded cheese

  • 1 cup shredded parmesan cheese

  • 2 tsp parsley

  • 2 eggs

  • 2 cups cut up pre bought rotisserie chicken

    Alfredo

  • 4 Tbsp butter

  • 2 Tbsp flour

  • 2 cups milk

  • 1 cup heavy cream

  • 1 Tbsp minced garlic

  • 1/4 cup fresh parsley

  • 2 Tbsp fresh basil

  • Salt and pepper to taste

  • 1/2 tsp onion powder

  • 1 tsp garlic powder

 

Directions

  1. Preheat oven to 375°F.

  2. Combine the filling ingredients and set to the side. You will fill your shells with this after the alfredo is done.

  3. In a medium saucepan, melt the butter. Add the flour, stir until combined, and let cook a minute or two, then whisk in the heavy cream. Whisk in the milk and seasonings,

  4. Add 1 cup of mixture to the bottom of a 9x13 baking dish

  5. Stuff each shell with the filling mixture and layer pan on top of alfredo sauce.

  6. Add 2 bags of frozen broccoli florets microwaved to directions into the remaining alfredo sauce and pour over the top of the shells. Add remaining parmesan cheese and 1 cup mozzarella on top of sauce

  7. Bake at 375 for 25-30 minutes. Allow to cool and enjoy!
