Breakfast, Potato Pancakes with Sunny Side Up Eggs, & SPAM
While we recognize that during times of food insecurity and scarcity, many people won’t have the recommended three meals per day. But for some, whose dietary and health needs are impacted, eating on regular basis is important. Ashton shared with us some additional recipes she is using for Day 2 of the Food Pantry Challenge.
Leftover Mashed Potato Pancakes, with Spam and Eggs
Ingredients:
1 C. Leftover Mashed Potatoes
4 TBSPS AP Flour
1/4 C. Milk
1 Large Egg
1/2 Large Onion, Diced Fine
2 TBSPS Butter & 1/8 C. Olive Oil
Black Pepper & Garlic Salt to Taste
Recipe:
In your bowl add in milk, egg, and 2 tablespoons of flour and mix together well.
Then add in preferred seasonings and leftover potatoes.
Whisk together well and add in last 2 tablespoons of flour and whisk again.
Now fine dice your onion and add it to the batter.
Heat a skillet on medium high heat and add in butter and oil to the pan.
While it heats up open up a can of SPAM and dice up some slices
Once heated, add a scoop spoonful of the batter to the pan and fry until edges become browned and crispy and then flip. Fry for another five minutes.
When done place on a plate and continue with other pancakes. Keep these warm in an oven set to warm.
to the same hot pan, add the diced SPAM and crips up. Then cook your eggs.
Remove the pancakes from the oven. Top with SPAM and your eggs, garnish as you please
This should make 4/5 pancakes. Serve and enjoy!
