Ingredients
1 French bread loaf, cut bread in ½ inch slices
2-3 garlic cloves
6 Roma tomatoes
3 tbsp extra virgin olive oil
1 tsp salt & pepper
fresh basil leaves, as much as you like
8 oz fresh mozzarella
Balsamic glaze
½ cup brown sugar
2 cups balsamic vinegar
Bring to a boil, then simmer until reduced by half
Directions
Cut the tomatoes roughly over a bowl to catch all the juices.
Slice and stir inbasil leaves, extra virgin olive oil and salt.
Peel garlic and cut in half.
Toast the bread under a broiler then rub the warm bread with a cut garlic cloves.
Spoon on the tomato mixture onto each slice of the bread.
Slice mozzarella into thin slices and trim, the ends to look like the bottom of a ghost
To finish, drizzle with extra virgin olive oil and sprinkle with salt
Put balsamic glaze for the eyes
Serve immediately so that the bread is not soggy
