Christine's getting ready for Halloween with these spooky crostinis! The mozzarella ghosts served with baked slices of garlicky French bread and a tomato, balsamic, and basil mixture is perfect for a fall appetizer
 

Ingredients

  • 1 French bread loaf, cut bread in ½ inch slices

  • 2-3 garlic cloves

  • 6 Roma tomatoes 

  • 3 tbsp extra virgin olive oil 

  • 1 tsp salt & pepper

  • fresh basil leaves, as much as you like

  • 8 oz fresh mozzarella

    Balsamic glaze

  • ½ cup brown sugar

  • 2 cups balsamic vinegar

    Bring to a boil, then simmer until reduced by half

 

Directions

  1. Cut the tomatoes roughly over a bowl to catch all the juices.

    Slice and stir inbasil leaves, extra virgin olive oil and salt.

  2. Peel garlic and cut in half.

    Toast the bread under a broiler then rub the warm bread with a cut garlic cloves.

  3. Spoon on the tomato mixture onto each slice of the bread.

    Slice mozzarella into thin slices and trim, the ends to look like the bottom of a ghost

  4. To finish, drizzle with extra virgin olive oil and sprinkle with salt 

    Put balsamic glaze for the eyes

    Serve immediately so that the bread is not soggy
