Black Bean Taco Bowl

 

Ingredients

  • 1 pound ground beef

  • ½ onion, chopped

  • 2 cloves garlic, minced

  • 1 packet taco seasoning

  • 1 can black beans, drained and rinsed

  • 1 can fire-roasted corn, drained

  • 8 oz Sharp Cheddar Cheese

  • 2 Chipotle peppers chopped

  • 1 can Rotel drained

 

Directions

  1. In a large skillet, brown the ground beef with the chopped onion and minced garlic over medium heat until fully cooked. Drain any excess fat.

  2. Add the taco seasoning to the beef mixture and stir until well combined.

  3. Mix in the black beans, Chipotle peppers, Rotel, and fire-roasted corn. Cook for another 5 minutes, stirring occasionally, until everything is heated through.

  4. And there you have it! Ready to serve with this Tomato Tajín rice and this guacamole. Top with cheese, tomatoes, or other toppings of choice
