Banana Bread

 

Ingredients

  • 1 ¼ lbs. mashed, over ripe bananas (we used 4 large bananas)

  • ¼ cup vegetable oil (canola can be substituted)

  • ¼ cup salted butter (unsalted works too, just add ½ tsp salt)

  • ⅔ cup light or dark brown sugar tightly packed

  • ½ cup sugar

  • 2 large eggs lightly beaten

  • 1 tbs vanilla

  • ¼ cup buttermilk and combine again until fully mixed

  • 2 cups all purpose flour

  • ¾ tsp baking powder

  • ½ tsp baking soda

 

Directions

  1. Mix the bananas, oil, butter, and the sugars until fully combined by hand. Then add in the eggs, vanilla, and buttermilk, and combine until fully mixed.

  2. Stir in 1 cup of flour, mix, and then add in the second cup of flour, baking powder, and baking soda.

    At this point you can also add any nuts, chocolate chips, or any other additives you wish.

  3. For large bread pans bake at 350°F for 60 minutes. If baking into mini loaf pans, bake for 25 minutes.
