Texas Sheet Cake Cookies

 

Ingredients

Cookies

  • 1 box chocolate cake mix

  • 2 eggs

  • 1/3 cup of vegetable oil

    Icing

  • 1/2 cup butter

  • 2 tbs cocoa powder

  • 3 tbs milk

  • 2 1/2 cups powdered sugar

 

Directions

  1. Prehest oven to 350°F. Mix all together the cookie ingredients in a stand mixer.

  2. Once combined, use a cookie scoop to scoop balls, the roll them into balls, slightly flattening into discs

  3. Bake for 9 minutes

  4. Immediately after removing, use a larger ice cream scoop to put a small dent into the tops of the cookies to later be filled when completely cooled.

  5. Icing: Melt butter over medium low heat. Whisk in cocoa. Add in milk and continue to stir until combined

  6. Add one cup of powdered sugar, slowly mixing each time until it is no longer clumpy before adding the rest.

  7. Use a large spoon to fill each cooled cookie with icing. Allow to cool completely and serve. It will take about 30 min to fully set up.
