Tex-Mex Cornbread
Found on the back of the Martha White Self Rising Yellow Cornmeal Mix package.
Ingredients
1 tsp vegetable oil of butter
2 cups Self-Rising Enriched Yellow Corn Meal Mix
1 large egg
½ cup milk
2 Tbsp olive oil
1 tsp sugar
1 cup (4 oz.) shredded Cheddar cheese
1 (4 ½ oz.) can chopped green chiles, drained
or 2 tablespoons chopped jalapeno chiles
1 (8 ½ oz.) can cream-style corn
Directions
Heat oven to 425°F. Coat a 8-inch square pan with oil. Place in oven to heat for about 5 minutes.
Whisk egg in medium bowl. Stir in corn meal mis, corn, milk, oil and sugar until smooth. Stir is cheese and and pepper until blended. Pour batter into hot pan.
Bake 25-30 minutes or until golden brown. Cool 10 minutes before serving.
